The diffusion behavior of phenolic compounds in the aqueous organic phase was studied by the time-resolved Fourier transform infrared spectroscopy (TRIFT). A new diffusion model was proposed to fit the data based on the influence of interfacial layer and macromolecules interactions on the retardation of phenolic diffusion. An excellent agreement was obtained between the experimental data and the fitting results. The results clearly show that the diffusion of phenolic compounds is governed by three stages including the process of diffusion into the interfacial layer, dispersion of interfacial layer and diffusion into the aqueous phase. The diffusion time of phenolic compounds in the aqueous phase was determined as around 2-10 ms, which is significantly shorter than that in the organic phase.
